spinach chicken rolls

i tried chicken rolls AGAIN! and not to toot my own horn, but they were pretty darn delicious! what’s even better is they’re super easy to make, low-calorie and super healthy! this time i tried spinach chicken rolls, and i just made the recipe up today haha.

what you’ll need:

  • chicken breasts (however many you’ll need)
  • two handfuls of baby spinach
  • 1 fresh garlic clove
  • 2 fresh chiles
  • 3-4 cherry tomatoes
  • salt
  • parmesan cheese
  • olive oil

how to:

  • preheat oven to 375 degrees
  • coat glass dish with olive oil
  • thaw chicken breasts (i used 3)
  • put spinach, chopped garlic clove, fresh chopped chiles and sliced cherry tomatoes in a food processor and blend until paste-like
     
  • mash the chicken breasts flat
  • spread a heaping spoonful of the spinach paste onto each chicken breast
  • sprinkle seat salt
  • sprinkle parmesan cheese
  • roll up, put extra spinach paste on top, and secure with toothpick
  • bake at 375 degrees for 35-45 mins

let cool and ENJOY!
