pan-seared salmon w/ avocado

what’s the perfect filling yet healthy meal that’s light on the palate? SALMON. i’m gonna be honest with you all…. i made TWO servings of this for myself. it’s so delicious!!  get ready to learn how to make this yummy pan-seared salmon with avocado spread!


what you need:

  • thick salmon fillets
  • EV olive oil
  • sea salt
  • chives
  • parsley
  • 1 avocado per 2 or 3 fillets


how to cook it:

  • heat up your skillet (hot!)
  • add a tablespoon or two of your EVOO
  •  place thawed salmon fillets in the hot skillet on their tops for about 20 seconds to sear them
  • flip them over on their bottoms and reduce to medium heat
  • sprinkle them with sea salt, chives and parsley
  • place a lid on top of the skillet
  • let cook for about 5-7 minutes

while the salmon is cooking-

  • mash up 1 avocado per 2-3 filets
  • add salt to taste and mix

when the salmon is ready-

  • plate the filet
  • add a layer of avocado on top OR place a mound next to it for dipping (i smeared mine on top; YUM!)

this can be served with steamed asparagus and garlic mashed potatoes… ENJOY!
